“Elaine is the best cook on Parliament Street!” said a regular visitor to The Yonge Street Mission. “Everything she cooks is so good. I live alone and don’t cook much; it’s special to have dinner with my friends here.”
Here is Elaine’s mushroom meatloaf, made with love, to feed 120.
- 35 lb. ground beef
- 6 large onions
- 3 lb mushrooms, sliced
- 3 tablespoons garlic paste
- 1 dozen eggs
- ½ cup flour
Mix ingredients and form into 3 large loaves, put each one on a large cookie sheet. Bake for 2 hours at 350.
Remove from oven, slice. Mix juice from meatloaves with 4 cans of mushroom soup. Pour sauce over sliced meatloaf, return to oven for a half-hour, then serve.
This is everyone’s favourite comfort food for the cold weather,” says Elaine, “and I love making it for them!”
